Spinach-Artichoke PIE recipe
I made this tonight it was so good! It is my spin on the Artichoke Pie Recipe.
9" Frozen Pie Crust 1 Bag or Box of Frozen Artichokes (about 16 oz) 1 Bag or Box of Frozen Spinach (about 8 oz) 4 Eggs (beaten) 1 Small Onion, diced 3 Garlic Cloves, diced Black Pepper (optional) 1 (8 oz) package of Mozzarella Cheese, shredded 1 Cup shredded Parmesan Cheese 2 TBL of Olive Oil 1 TBL spoon of Butter
Preheat Oven to 350 degrees.
Cook Frozen Artichoke and Spinach as directed on the box (bag). Once cooked, make sure you drain all the water out (I used paper towels).
In a separate pan, Heat oil (medium heat) and butter together and Add onion and garlic. Saute until translucent. Add the drained artichoke and spinach to the onion and garlic and continue to saute for about 10 minutes. Remove from heat.
In a bowl, combine the above mixture with 1/2 Mozzarella cheese. Pour Mixture into Pie crust and pour egg mixture on top. Add the remaining Mozzarella cheese and Parmesan cheese on top of the egg mixture.
(If you buy the frozen pie crust, they usually come in 2's. So I used the second pie crust for the top. All you do is remove the crust from the aluminum and place it on top. Don't worry about tearing it. It will look okay once it is baked)
YOu don't need the second pie crust if you dont want it.
Bake 45 to an hour at 350 degrees.
For those of you who don't like eggs.....don't worry you don't really taste it. I hate eggs and it didnt taste like egg at all.
