I need a coconut shrimp recipe.....

I have some jumbo shrimp and a bag of coconut in the house. I love coconut shrimp when I order it when out to eat. Anyone have a recipe to make it at home? It can be baked, deep fried, etc., I don't care.

Thanks, I might try #3. I want to do it this week for dinner.

I also found a recipe where the shrimp is coated in honey before the coconut and it sounds delicious.

I'll report back once I make them!

This recipe is the one I use--it is yummy! I haven't made it in awhile and now looking at the recipe makes me want to make it!

The recipe is for about 1 1/2-2 lbs of shrimp. I usually try to butterfly them 1st because then there is more surface area for the batter/coconut. I was rushing one time and didn't butterfly them and it came out good too.

In a large bowl stir together:
-1 cup flour
-2 teaspoons salt
-1 teaspoon baking powder
-1/2 teaspoon red pepper flakes

Whisk in:
-3/4 cup orange juice
-1/2 cup milk
-2 eggs

Put the shrimp into the batter and let sit for 30 minutes. Meanwhile, mix together 3 cups shredded coconut and 1 cup unseasoned bread crumbs. After the shrimp come out of batter press them in the coconut mixture.

While shrimp is in the batter, also heat about 3 cups vegetable oil in heavy pot or deep fryer. Place shrimp in oil and fry in small batches turning 1-2 times. Each batch will take about 4 minutes. Remove to paper towel to drain.

This is the recipe for Outback Steakhouse's "Gold Coast Coconut Shrimp" from my top secret recipes cookbook:


1 cup flat beer
1 cup self-rising flour
2 cups sweetened coconut flakes (1 7ounce package)
2 tablespoons sugar
1/2 teaspoon salt
12 jumbo shrimp

veg oil for frying

paprika

marmalade sauce (for dipping)
1/2 cup orange marmalade
2 teaspoons stone-ground mustard (with whole gran mustard seed)
1 teaspoon prepared horseradish
dash salt

1. For the batter, use an electric mixer to combine the beer, flour, 1/2 cup coconut flakes, sugar and salt in a medium sized bowl. mix well then cover and refridge at least an hour.

2. prepare your own marmelade sauce by combining all 4 ingredients in a small bowl. cover and fridge at least an hour.

3. prepare the shrimp by deveining and peeling off the shell back to the tail. leave the last segment of the shell pluss the tailfins as the handle.

4. when the batter is ready, preheat oil in a deep pot or deep fryer to about 350' F. Use enough oil to completely cover the shrimp. Pour the remainder of the coconut into a shallow bowl.

5. Be sure the shrimp are dry before battering. Sprinkle each shrimp lightly with paprika before the next step.

6. Dip one shrimp at a time into the batter, coating generously. Drop the battered shrimp into the coconut and roll it around so that it is well-coated.

7. Fry 4 shrimp at a time for 2-3 minutes or until the shrimp become golden brown. You may have to flip the shrimp over halfway through the cooking time. Drain on paper towels beiefly before serving with marmalade sauce on the side.
