Shrimp Parmigiana anyone?
Does anyone have a good recipe for Shrimp Parimigiana?

I don't have a recipe per se, however - it is really easy to make. The supermarkets sell breaded jumbo butterflied shrimp that is frozen. Buy a bag of that, and basically prepare it like you would chicken parmigiana.
Preheat the oven to 400. Fry the Shrimp so they are cooked through and golden brown. Coat a baking dish with a layer of tomato sauce. Arrange the shrimp in the baking dish, cover each shrimp with tomato sauce and mozzarella cheese.
Bake until cheese is melted and bubbly.

Ohh - I didn't realize you could get the frozen breaded shrimp! That was my concern - I didn't want the shrimp to be rubbery.

Yeah they sell them in the frozen section and they usually come in a bag.
