Bruschetta 'n Cheese Stuffed Chicken

I found this recipe on another board I chat on, and on a whim I made it tonight because I had all the ingredients in the house. It was soooo good, and very easy to make. This is how I made it, it varies a little from the original posted recipe.

1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1-1/4 cups Shredded Mozzarella Cheese, divided
1/4 cup chopped fresh basil
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
6 [boneless] skinless chicken cutlets
1/3 cup Seasoned Italian Dressing

PREHEAT oven to 350°F. Combine tomatoes with their liquid, 1/2 cup of the mozarella cheese, basil and dry stuffing mix; stir just until moistened.

Place chicken cutlet on large cutting board. Spread evenly with stuffing mixture. Starting at narrow end, begin rolling chicken, as tightly as possible, around stuffing mixture. Place, seam-sides down, in 13x9-inch baking dish. Drizzle evenly with dressing.

BAKE 40 min. Sprinkle with remaining 3/4 cup cheese. Bake an additional 5 min. or until chicken is cooked through (170°F) and cheese is melted.

I served it with carrots. Since the stuffing is inside, I didn't think it needed much else. Any veggie will do.

I am making this recipe this week. I just did my grocery shopping and I bought all the ingredients! It sounds really good! I will let you know how it turns out!

I noticed on the back of the Stove Top Stuffing there is a recipe for this but casserole style - it sounded good too....just about all the same ingredients...

OMG it was delicious! I actually came across this recipe on the KRAFT website, and instead o fuisng Italian dressing like in this recipe posted here, the original called for Kraft Sun Dried Tomato Italian dressing with Parmesean - and I bought that and used that and it was out of this world! I am sure with the regular Italian dressing it would be just as good - what a great recipe!!! This is a keeper!

OK, so I finally made this tonight. but I used the recipe from the Kraft Food & Family magazine. DELICIOUS!!!!!! I didn't put enough cheese on it, so next time I will measure instead of eyeball it. but it was SO GOOD!!!!

made it last night...so inexpensive, so easy, and came out sooooooo good. I made it with sweet potato chips, I had extra stuffing left over, so I cut sweet potatos, seasoned and baked, for the last 10 minutes, I topped with the extra stuffing. Really was good.

also made green beans and rice...I know 2 starches, but DH is a rice fanatic.

thanks, recipe is in my rotation and definitely passed on!
