A variation on Lasagna-lasagna rolls!
LASAGNA ROLL-UPS
8 oz. pkg. lasagna noodles 1 tbsp. oil 1 (10 oz.) pkg. chopped broccoli, thawed 2 tbsp. minced onion 1 (16 oz.) container Ricotta cheese 1/4 c. grated Parmesan cheese 1 egg 4 oz. shredded Mozzarella cheese 1 (21 oz.) jar spaghetti sauce
Cook noodles as per package directions. Over medium heat in hot oil, cook broccoli and onion until tender. Add Ricotta, Parmesan and egg. Drain noodles; place on wax paper. Spread evenly with cheese mixture; roll up jelly roll fashion. In a 12x8 dish, spoon 3/4 of spaghetti sauce. Arrange rolls seam-side down on top of sauce. Cover with Mozzarella and remaining sauce. Bake at 375 degrees for 30 minutes. Yield: 6 servings.

FYI, place them seam down...imperative....meaning that the curly edges are both shown. Otherwise, the cheese falls out.

I make them, but I use spinach instead of broccoli - they are delish!
