I don't have mine on me, but it's very similar to this one: Carrot Cake
You don't taste the pineapple at all; it just makes the cake very moist. This recipe is missing the cream cheese frosting!

Usually I like to make things from scratch and Ive tasted homemade carrot cakes and to me it doesnt compare with the boxed kind by Betty Crocker! It's super moist!
I have followed the 2nd recipe offered on the box that adds pineapple chunks, walnuts, raisins, etc and that comes out REALLY good also!!

Carrot Cake
1 ½ cups sifted flour 1 ¼ cups sugar 1 ½ tsp. baking soda 1 ½ tsp. cinnamon ¼ tsp salt 2/3 cups oil 2 jars strained baby carrots (4 oz) 2/3 cup coconut 2 slightly beaten eggs ½ cup chopped walnuts 1 can (8 oz) crushed pineapple, drained
In 9“ square baking pan with fork mix well; flour, sugar, baking soda, cinnamon & salt. Add carrots, oil, eggs, and vanilla. Mix briskly with fork until thoroughly blended. Stir in pineapple, coconut and walnuts. Bake in pre-heated oven at 350 for 40/45 minutes or until pick inserted comes out clean and cake pulls away from sides of pan. Cool
Cream Cheese Frosting
3 oz of cream cheese - softened ¼ cup butter/margarine ½ tsp vanilla 2 cups confectioners sugar (sifted)
With mixer, cream cheese, butter and vanilla until blended. Add sugar and beat until smooth. Frost cake.
