Lotsa latkes!
So, who has yummy latke recipes they can share!! I'm hosting my first ever Chanukah dinner and I need a little help in the latke department! TIA.

I have two recipes: One the traditional, for DH and another b/c I am on the South Beach Diet. The tradional recipe is delicious! I haven't tried the SBD recipe yet.
Traditional: 3 large Potatoes (Peeled, Grated and drained) *Make sure you get all of the moisture out use kitchen towel.
1 small onion, grated 1 Egg & 2 egg whites beaten fluffy 1 Tablespoon of Matzoh Meal Pinch of Salt
Mix ingredients together and drop into Hot oil, brown on both sides.
Drain and Enjoy with Sourcream and Applesauce!
ETA: Variation for traditional is to mix it up with sweet potatoe and regular potatoe --------------------------------------------------------
My South Beach Diet version- Phase 2: 2 medium zucchini & 1 sweet potato (peeled, grated, and drain excess water) 1 small onion, grated 3 Tablespoon of Wholewheat Matzoh or flour 1 tsp. of baking powder 2 Eggs, separated and Beat egg whites until Fluffy and afterwards, fold into yolk. 1/2 tsp salt 1/2 tsp pepper Oil for frying
Heat oil for frying.

Drain and Enjoy with Sourcream and Applesauce!
