Give me some quick and easy dinners

Ugh now that I am back at work I am at a total loss for what to cook the family for dinner. I need quick, I need easy, I need help!!

So working ladies, what are you cooking for dinner???

pasta with jarred pesto and cheese.

or chicken (from this place that makes prepared chicken) with broccoli with a lemon sauce.

hmm... well i have a couple that are super easy to prepare, but take awhile to cook....
one i found on here
take 3-4 potatoes and cut them into thin wedges. put 3-4 chicken breasts in a lasagna pan (9x 13), put the potatoes around the chicken and dump about 1/2 cup italian dressing over the whole thing. bake at 400 covered for 30 minutes, then uncover and bake for another 20-30 minutes till potatoes are more done.
so, takes 5 minutes to make but an hour to bake.... SOO yummy though!
another similar one- in a 9x13 pan,put one can of cream of chicken soup, some water and about a cup of uncooked rice mix around to make like a soup. add boneless, skinless chicken breasts. bake at 375 for about 45 minutes. you can also add frozen veggies ( like corn) into the mix, too
these both take awhile to bake, but are super easy to prepare and at least you can do other stuff while they're cooking.
CROCKPOTS are also GREAT, too!!

'm the queen of quick & easy...looking for anything in particular?

baked ziti (which can be frozen)
sausage & peppers (can be frozen)
goulash in the slow cooker (can be frozen)
chili (freezable)
homemade sauce (freezable)

I'll roast whole chickens on days I'm home

buy already prepared chicken strips, flour (or flavored) tortillas and some cheese....chicken & cheese quesadillas (I make mine in the toaster for DD and DH)

tortellini w/ pesto sauce or tomato sauce or made into a pasta salad w/ cheese cubes, veggies, and cut up pepperoni (toss w/ italian salad dressing or use McCormick Salad Supreme seasoning)

hot dogs-slice almost to the end, rip up a slice of cheese into 1/3 and stick in slits. Roll in a crescent roll and bake.

need more ideas?

Cook up a bunch of chicken breasts on Sunday. Try to use different seasonings.

Freeze them in freezer bags.

Each day, defrost what you'll need for a dinner portion for your family. (You can throw the bag in a bowl of hot water or use the microwave).

Stock up on frozen veggies.

Pick a different veggie each night.

Combine chicken and veggie with some quick couscous from a box or rice or pasta for a complete meal! If I make pasta, I also cover the chicken with sauce for a different taste.

You can also throw in a quick salad.

OR healthy soups like lentil soups, pre-made.

You could also do a stir-fry but that could require a lot of cutting (or buy pre-cut stif fry packages). I've been thinking of getting one of those "cutting gadgets."

Sometimes for quick dinners I'll look on the Campbell's soup cans- they have some decent recipes.
I think the Creamy Chicken & Herb has a good one w/ broccoli in it.

yeah... cambells soup website has a ton of great, easy recipes- you can put in the ingredients you have (ex chicken and broccoli), and it gives you some recipes... so does kraft food and family Chat Icon

Easy Shrimp 'Scampi'

2 TBS Olive Oil
2 cloves crushed garlic
24 frozen fully cooked shrimp
3 cups Fresh Spinach, washed well and chopped
Splash of White Wine
Salt & Pepper
1/2 lb dry pasta (any kind - I prefer penne, gemelli or rigatoni for this)
Grated Parmagean Cheese
Crusty Bread

In a microwavable safe dish, add oil, garlic, shrimp, white wine and spinach. Mix well.
Microwave on high for 2-1/2 minutes. Take out and stir. Microwave on high again for another 2-1/2 minutes. Stir. Spinach should be wilted and shrimp should be warmed. If not, put back again for 1 minute incriments until done.

In the mean time, on the stove, boil water and cook pasta according to directions.

Once the 'scampi' is done, mix in pasta and stir to coat.

Serve with crusty bread and a sprinkle of parmagean cheese. Better yet .... make garlic bread!

there's a recipe on the stove top box for a chicken bake. it's quick and easy and yummy. all you need is a box of (chicken) stovetop, a bag of mixed frozen veggies, 1 lb of boneless skinless chicken breasts, a can of campbells cream of chicken soup and some sour cream

i LOVE making chilli!!

1 can pinto or kidney beans
1 small can tomato sauce, 1/2 can water
1/3 lb ground turkey or beef
chopped onion
1/2 packet mccormick's chilli seasoning.

brown beef and saute onions. add tomato sauce, water, and seasoning. cover and simmer for 10 minutes. serve w/shredded cheddar cheese, sour cream and green onions. soo easy to make and soo yummy!!

makes 2.5 servings.

I make sliced london broil a lot..I marinate it in either worcheshire (sp?) sauce or teryaki..and grill it in the foreman grill...so either with veggies, or a baked potato or baked sweet potato...and then with the leftovers I make sliced steak on garlic bread with mozzerella cheese. yummy!

my favorite quick and easy is kielbasi, peirogies and saurkraut

sautee the pierogies with butter and onion -

I fry the kielbasi in pan with the saurkrat and the juice (so it doesn't stick)

serve with the peirogies, some rolls and mustard - and there you go!

meatloaf androasted potatoes-add onion soup mix to the potatoes YUM!

Homemade Tacos

Penne Ala Vodka (with Victoria's Sauce- spice it up yourself and add mushrooms and/or chicken)

Stir Fry
Slice up Steak- or buy the ones already sliced, peppers, onions... add adobo, and other seasonings you like... when the steak is just about done, add sliced tomoatoes until it is becomes "saucy" unless you like it more chunky

Chicken Cutlets
with string beans and mashed potatoes

This is easy and YUMMY


4 chicken breasts (cut up into chunks)
1 TBSPN Mayo or Miracle Whip (your preference, I like Miracle Whip for this recipe)
1 can cream if chicken soup
1/4 Cup Milk
about 8 ounces cheddar cheese (shredded)
Frozen Brocolli thawed and steamed (about 1-1 1/2 Cups)...Fresh works too
Rice enough for your family....we have five people I usually make about 4 servings.

Cook Chicken in Mayo, when cooked up add soup, milk, brocolli and cheese. Cook rice and serve the chicken miture on top.
