Sauce

I made sauce w/meatballs yesterday. Someone suggested adding pepperoni to the sauce. OMG....it was amazing. The sauce, the pepperone, everything. My mouth is still watering today over it.

I bought the Boars Head pepperoni, took the casing off and then cut it in half and cooked in sauce for 2 1/2 - 3 hours. It was so tender. I removed from sauce and cut up into slices.

I was telling DH about this while at the supermarket. He said, sounds great! He went straight ahead and picked up the ground beef, then he picked up Italian sausage. I said, great! DUH! (Italian sausage?)

Then at home, he was in the kitchen and somehow finished making the meatballs, and said, come see!

When I saw them, he had mixed the Italian sausage with the ground beef all together, and formed the meatballs.

I said, oops!

They came out nice, but it's not your recipe!!!! I am going to try this again, next time! UGH

I make my meatballs separately. I get 1 lb ground beef, I put 3 slices of crustless white bread into the blender to make bread crumbs, 1 egg, parsley and romano cheese. Form meatballs. In olive oil, I put in garlic cloves, and when hot, cook meatballs.

While meatballs are cooking, I make sauce. I put in a little olive oil, garlic and onions. When they are tender, I put in 3 cans crushed tomatoes, crushed red pepper, parsley, basil and this time I added the pepperoni.

After meatballs are cooked, I add them to the sauce. After I remove the meatballs, I add tomatoe paste and a can of water and 1 tbsp of salt to the pan that had the meatballs in it (leave garlic and grease in). Once desired thickness, pour paste into your sauce.

Cook for 2 - 3 hours. So good.

ETA: I made this recipe yesterday, and it was fantastic! I would use less salt at the end, there (maybe 1 tsp). Otherwise, was great! DH loved it, too!

Thanks for the tip. My aunt usually throws in a chunk of any hard cheese.....soooooo yummy!
