I made this a few weeks ago and my DH flipped over it
I cooked the shrimp in a pan with a little bit of olive oil with garlic.
I added in a jar of prepared pesto sauce and then a can of diced tomatos. to thin it out a little. (you can also add a little splash of milk to make it creamy)
I let it cook for a bit then serve it over pasta or rice!!
YUMMY!!

Easy Shrimp 'Scampi'
2 TBS Olive Oil 2 cloves crushed garlic 24 frozen fully cooked shrimp 3 cups Fresh Spinach, washed well and chopped Splash of White Wine Salt & Pepper 1/2 lb dry pasta (any kind - I prefer penne, gemelli or rigatoni for this) Grated Parmagean Cheese Crusty Bread
In a microwavable safe dish, add oil, garlic, shrimp, white wine and spinach. Mix well. Microwave on high for 2-1/2 minutes. Take out and stir. Microwave on high again for another 2-1/2 minutes. Stir. Spinach should be wilted and shrimp should be warmed. If not, put back again for 1 minute incriments until done.
In the mean time, on the stove, boil water and cook pasta according to directions.
Once the 'scampi' is done, mix in pasta and stir to coat.
Serve with crusty bread and a sprinkle of parmagean cheese. Better yet .... make garlic bread!
