Can those of you who observe lent share what you are making for dinner tonight?

I have a package of lemon pepper pasta at home that I've been wanting to try. I going to make a garlic & olive oil sauce and wilt some spinach in it at the end.

Also try:

Smoked Salmon Pizza
Serves 4
1 (16-ounce) Italian bread shell (boboli)
2 medium tomatoes, very thinly sliced
1/3 pound sliced provolone cheese
1/4 pound thinly sliced smoked salmon
1 cup crumbled semi-soft goat cheese
Fresh parsley, chopped, for garnish

Preheat oven to 400 degrees. Place bread shell on a baking sheet. Arrange the tomatoes, provolone and salmon on top. Sprinkle with the goat cheese. Bake for 12 minutes. Sprinkle with parsley before serving.

I leave out the goat cheese sometimes & it's still good.

Basil Pesto
3 cloves of garlic
2 cups of basil leaves
olive oil
toasted walnuts (or pine nuts)
salt & pepper
parmesean cheese

In a food processor pulse the garlic & basil. Drizzle in oil while pulsing until it reaches the consistency you are looking for. Add salt and pepper to taste. Meanwhile toast the walnuts or pine nuts in a hot dry pan. Add to food processor and pulse to incorporate in sauce. Pour over your favorite hot pasta. Garnish w/ parmesean cheese. No need to heat the sauce the pasta will do that for you.

We're actually having homemade pizza bagels tonight, but you can have:

Linguini w/ clam sauce;
Penne al la vodka (w/ or w/o shrimp);
Rigatoni with broccoli, garlic, and EVOO;
Shrimp scampi with rice

The Butternut Squash & Cous Cous recipe I just posted is Ash Wednesday/Lent Friday friendly!

ETA: I'm a vegetarian, so here's some of my regular dinners, in case you need ideas:

- Bean Burritos - take out, frozen from the grocery store or home-made (veggie refried beans - watch for the lard, salsa, avocado, lettuce, etc.)

- Indian food - TONS of veggie options (our favorite is Punjab Choley from Trader Joe's)

- Veggie chili

- Veggie burgers & fries

- Veggie stir fry with rice or udon noodles

- Pasta with sauce & garlic bread

- (fakin)BLT pasta - past with tempeh bacon (delicious and way healthier than regular bacon - find it at Whole Foods or in some grocery health-food sections), cooked arugula & cherry tomatoes

If I think of more, I'll add them.

I am making a medly of veggies (spaghetti squash, eggplant, mushrooms) with wheat pasta

This Friday we will probably have linguini and clam sauce, who knows what else I'll make for the next few fridays

Tonight I am having Crunchy Tilapia courtesy of Gordon's Frozen foods

My DH is have an egg white omlet with cheese
