fish?
DH and i like some seafood... flounder, filet of sole, shrimp... i see all these other types of fish mentioned here and also on menus of course. what's a good fish to try if i am out (that's pretty basic, most people would like) and what's something i can make pretty easy, as i'm just starting out. suggestions and recipes, please!

Ok, here's what I make for DH all the time & he loves it. Get 2 good size pieces of scrod (flounder works well too but is more expensive.) Spray a cookie sheet with Pam and put the fish on it. Then, combine in a bowl 3/4 of a tube of Ritz crackers, 3 tablespoons melty butter(not totally melted but on its way) and about 2 tablespoons lemon juice. Mash it all up really well with a fork, and spread on the fish. Cook at 375 for about 35 minutes, or until the fish is flaky & opaque. Enjoy!!! --Meaghan

I made this friday and it was super easy and now my DH FAVORITE fish dish he has ever had.
Crabmeat-Stuffed Flounder Roulades 3 tablespoons unsalted butter 1/2 pound fresh lump crabmeat, picked over for shells and cartilage (I use 2 cans of crabmeat) 1 1/2 teaspoons Essence, recipe follows 1/4 cup minced yellow onion 2 tablespoons minced celery (I omit, DH hates) 2 tablespoons minced green bell pepper 2 tablespoons finely chopped fresh parsley leaves 1 1/2 teaspoons minced garlic 2 tablespoons mayonnaise (I use fat free) 1 egg, lightly beaten (I use 2 egg whites) 4 teaspoons fresh lemon juice 1/2 teaspoon Worcestershire sauce 3/4 teaspoon red hot sauce 3/4 cup crushed butter crackers (recommended: Ritz) (I used light) 1 1/4 teaspoons salt 1/4 teaspoon freshly ground black pepper 4 (6 to 8-ounce) flounder fillets, skinless, pin bones removed (I made with tilapia also) 2 lemons, 1 cut into thin slices and 1 cut into wedges for serving 3 tablespoons melted unsalted butter, for drizzling over the fish (I did not do this)
Position rack in center of oven and preheat the oven to 350 degrees F. Using 1/2 tablespoon of the butter, grease a shallow baking dish and set aside.
Place the crabmeat in a large bowl and season with 1 teaspoon of the Essence. Cover with plastic wrap and refrigerate until ready to use.
In a medium skillet, melt the remaining 2 1/2 tablespoons of the butter over medium-high heat (I did not do this, I just saute in a nonstick pan with cooking spray and a little white wine). Add the onion, celery, and bell pepper and cook, stirring, until softened, about 4 minutes. Add 1 tablespoon of the parsley and the garlic, and cook, stirring, for 1 minute. Remove from heat and let cool.
Add the cooled vegetables to the crabmeat and toss gently to combine. Add the mayonnaise, beaten egg, lemon juice, Worcestershire sauce, and hot sauce and stir gently with a large wooden spoon. Add 1/2 cup of the cracker crumbs, 1/4 teaspoon of the salt, and pepper, and stir gently, being careful not to break up the crabmeat.
Season each fish fillet with 1/2 teaspoon of Essence and 1/4 teaspoon of salt and place the fillets skin side up on a work surface. Divide the crabmeat filling evenly among the centers of the fish fillets and, using your hands, roll the fillets up to encase the filling. Secure with a toothpick, if necessary. Place the fillets, seam side down, in the prepared baking dish and top with slices of lemon. Sprinkle the remaining 1/4 cup of the cracker crumbs evenly over the tops of the fillets. Drizzle with the melted butter. Using oven mitts or pot holders, place the baking dish in the oven and bake until lightly golden and cooked through, about 20 minutes.
Using oven mitts or pot holders, remove the baking dish from the oven and serve the fish using a metal spatula. Garnish with the remaining tablespoon of parsley and serve with additional lemon wedges, if desired. Serve immediately with Green Beans Almandine
Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast): 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried oregano 1 tablespoon dried thyme Combine all ingredients thoroughly.

Funny you posted this. I was going post that I tried making fried flounder for the first time ever last night and I must admit it came out PERFECT! You make it just like chicken cutlets. Yummy!

salmon,flounder,tilapia are all easy to cook with.
salmon I usually mix up w/ some spices, tomatoes, onions and wrap it in tin foil w/ a thin slice of lemon and drizzle a little EVOO and bake in the oven
tilapia and flounder - I mix up some breadcrumbs, salt, pepper and parmesean cheese and cook it on the stove with a little EVOO.

seared tuna is excelent and easy its allabout getting fresh tuna
Spice Blend 1 T coriander seeds 1 T fennel seeds 2 tsp. black pepper 12 oz tuna, 2 pieces, 1 1/2 inches thick 2 tsp. olive oil salt To prepare the spice blend, grind all spices in a mini-food processor and spread the spice mixture evenly on a large plate.
Rinse the tuna fillets and pat dry. Place one side of each piece of tuna into the spice mixture. Shake off any excess.
In a 10 inch non-stick skillet, heat 1 tsp. olive oil over high heat until almost smoking.
Carefully place 2 tuna fillets, spiced side down, into the skillet. A spice crust should form within 1 minute. Using kitchen tongs, turn over tuna, lower the heat to medium, and cook for 2 minutes to desired doneness.
its excellent!
serve with soy and some wasabi if you have on hand

When I make salmon I will cook it in one of those microvave steamers for 4 mins or wrap it in foil and put it in the oven for 10-15 mins (I forget the actual time). Sprinkle some salt and lots of fresh ground pepper. Mince 2-3 cloves of garlic and a slice a tomato (I use 1 Roma tomato for two pieces of fish). I wrap it all in foil OR I use the microwave steamer. I prefer the microwave steamer, b/c it comes out juicy.
Other times I will make an oreganata. It goes well with fish and is easy to make. I dont have my recipe with me ATM, but you can do a search and find a good recipe.

i bought some mahi mahi from trader joes last week (came in a freezer pack of 2 filets already seasoned) and all we had to do was put it in the oven.....it was tasty and easy

An easy way to make flounder or sole it to flour it and fry it, my mom's favorite. Squeeze a little lemon on top and you're golden.
You may also want to try
Mahi Mahi-very mild Grouper-more firm fish sometimes called the poor man's lobster, yet still mild Red Snapper
