Woo Hoo!! I booked my trip to Spain!
So, after finding only ridiculously high-priced plane tix to Greece, we scrapped that idea and decided on Spain instead! (Thanks for all your suggestions though.) We're flying into Madrid and will drive south to visit Seville, the Costa del Sol and Morroco!!! I can't friggin' wait! 
Any suggestions on where to stay or things to do are more than welcome

I will take some pics of Greece for you! We didn't have a hard time finding flights-- but. we are flying in and out of Paris.

wow! You are so lucky! I really wanted to go this summer. I studied abroad there a year and have been dying to go back and take DH this time. Did you get a good deal? When are you going?!

I did get a good deal through Iberia. I think they have the most decent rates of all the airlines heading to Europe this summer (other than BA going to England).
We're going from May 31 through June 10th. Can't wait!

Thanks ladies! At first I was going to use a travel agent, but I was finding better deals/packages on my own. So in the end, I decided to go it alone. It's worked out well for past trips.
