Quiche?

Does anyone have a good quiche recipe? Anything but Quiche Lorraine as DH does not eat pork.

OK... here it is. My friend told me from memory and she usually just makes it up as she goes along, so it isnt exact...


Deep Dish Frozen Pie Crust (or 2 regular sized ones)
3 or 4 eggs
Pint of Heavy Cream (you can also use some half & half)
Frozen choppped Broccoli (thawed & Drained)
2.5 cups sharp cheddar cheese (shredded)
3 or 4 pieces of swiss cheese
parm cheese
garlic
pepper


Beat eggs, add cream. Toss in broccoli, cheddar cheese, pinch of garlic and pepper. Mix. Break up the swiss cheese and throw in (save one slice). Stir. Add parm cheese (dont be shy with how much you add)

Pour mixture into frozen pie crust- put more swiss on top and sprinkle some more parm cheese.

Bake 350 for no longer then 1 hour- just watch it- Take out and let settle a bit... Chat Icon Chat Icon

eta: she said sometimes there is too much mix for the pie crust, and that is ok... she also said that sometimes she doesnt use the whole package of broccoli, but then if there isnt enought, she will throw more into the mix...

my MIL has a great mushroom quiche. let me know if you want it, i know some people dont like mushrooms that much.

Can you make a Quiche without cheese? I thought the whole point of Quiche was a cheese and egg pie?

If you wanted to try something similar to a Quiche but just a little different, why not try a Spanish Omlette Tortilla...

I use this for a mushroom quiche, it isnt too cheesy, but really light. I adapted it from a lorraine recipe, so here is the lorraine recipe, b/c you said you wanted to use ham up:

1 pie shortcrust shell
2 tbsp olive oil
1 onion diced
4 slices bacon (use ham, I got it from an Australian cook book and they dont have bacon like the US has, it is like ham)
6 medium eggs (5 large, since eggs in the US are bigger than here)
8 oz. cream
salt and pepper
2 tbsp parsley
4 oz parmigiano

Preheat oven to 350.

heat frypan over medium heat and add oil and onions and cook for 4-5 mins until onions soften. Add bacon and cook for 3-4 mins. remove from heat and let cool.

beat eggs with cream, s&p, parsley and cheese. spoon onion and bacon mix into shell and pour egg mix over onion and bacon mix. Cook for 30 mins until golden and set in middle. if it gets golden and isnt set throw some aluminium foil over it.

For mushroom:
add 6-7 oz of chopped mushrooms to pan while cooking onions. Cook for 5-6 mins until mushrooms are softened. For those that cant eat pork, cut pork out of the musroom recipe.

good light quiche, not too rich.
