Spanish rice??
I am hoping someone can help me here.
I want to know how to make white rice but with a spanish flavor. My ex's mom made the best rice ever. It was always orangy in color but when I just use the sazon packet, it turns it orange but doesnt give it the same flavor. There has to be something else in there!
How do you guys make yours? I dont want to add beans or anything else, just rice but with flavor. I am so tired of plain old white rice. TIA.

The way I make yellow rice is I put in the sazon while the water is boiling, then I add salt, oil and a homemade spanish seasoning called Sofito. My mother makes from scratch. I don't really know what all the ingredients in it because my mom makes it and hands them out to me and my sister ( we put that in everything ) I know you can buy ready made Sofrito at the store in the goya aisle I belive. It comes in a jar.

So funny because I put up a similar post not too long ago! & I swear, none of those old Spanish women will "share" their recipes (my MIL and my neighbor's MIL are included)......

I don't really make it with meat, other than the ham to make the sofrito and I do everything by "eye", but if you have any questions you can FM me:
1 can tomato sauce 1/2 green pepper chopped 1/2 large onion chopped 2-3 cloves of garlic chopped 2-3 tbs. olive oil small piece of cooking ham - cut up (about the size of a audio tape) 1 15 oz. can of beans (gandules, pink beans - whichever you want) 2 cups white rice (I use med. grain Goya white rice) Salt and pepper to taste
Saute onions, peppers, garlic, ham and olive oil (this is called sofrito) in a wok like pan on Med heat. Make sure not to burn the garlic. Do this for around 5 minutes. Toss in the can of tomato sauce and your choice of beans. Add salt & pepper. I usually taste at this point. It can be a little salty, but that's ok, you will be throwing in rice and water and that will dilute it.
Put your two cups of rice in a bowl and fill with water until about 1/2 inch over the rice. Throw entire bowl (rice and water) into pan. Bring stove top up to high until all of the liquid has dried up. Mix once or twice. Then as soon as the liquid has dried up, turn heat to low immediately, cover and leave for around 20 minutes until rice is cooked. Don't mix until rice is thoroughly cooked at this point or it will get mushy.
