Cinco de Mayo
I'm have DH's family over and there will be about 8 of us. Please tell me if this menu sounds OK.
Appetizers
Nachos with Chili and the works
Empanadas
Main Dish
Chicken Cheddar Enchiladas
Steak Fajitas w/ all the sides
Sides
Mexican Rice
Black Beans
Corn Bread?
Drinks
Sangria
Margaritas
Wine
Soda
Water
Anything I am missing or that sounds  Thanks!

Sure , I've never cooked dinner before for DH's fam so we'll see....I just told my brother who will eat anything that he might have a lot of leftovers if it doesn't go well.

Lipton makes a really good Taco Rice that goes really good in tacos... maybe have that as another side? It is really filling!

sounds great!
If you feel like going crazy you can always make mexican wedding cookies (Those are the almond crescent cookies that justs about every nationality has, but calls them something different)
