My sister used to go to UVM so i've been to burlington A LOT!! We love it there... definitely go to Church Street and walk around, there are great shops, restaurants, live music and Ben & Jerry's.
Some restaurants I recommend are:
Sweetwaters -- best spinach/artichoke dip
NECI (New England Culinary Institute) -- amazing food all prepared by students
Penny Cluse Cafe -- go there for breakfast it's delicious
Red Onion -- deli with the best sandwiches, I remember getting one with apples cut up in it... yum!
Those are the ones I remember since we went to each one every time we visited.
