What side dishes do you make with dinner?

Can you share them? I will make rice and veggies, but that's getting boring and I want to spice up life a bit. any ideas?

Potato stuffed spring rolls--get spring roll or wonton wrappers and make mashed potatoes, mix mashed potatoes, green onions, bacon bits, and shredded cheddar together, and put a heaping spoonful in the middle of the wonton wrapper. Roll it up, tucking the ends in, and lightly fry in oil. SOOO good, copycat of a Grand Lux recipe.

Pierogies, lightly fried in oil/butter with sauteed onions.

Fried onion straws--dredge thinly sliced onions in seasoned flour and fry.

Rice Pilaf--I use a recipe in my Betty Crocker cookbook.

Roasted baby potatoes with rosemary.

Potato croquettes-Use leftover mashed potatoes. Roll potato into little balls of potato. Roll in flour, beaten egg, and breadcrumbs, and pan fry.

I feel the same way. I make rice-a-roni, mashed potatoes, fried potatoes. I need something different too.

I lOOVVEEE making roasted potatoes.

Cube up any type of potato.

Coat them in olive oil (ziploc bag works)

Put them "guts side" down in a metal baking dish. Sprinkle with your favorite spices (garlic, onion powder, black pepper, rosemary)

Cover with foil.

Bake at 450 for 25 minutes

Flip over the potatoes, remove the foil and bake for another 15-20.

The sides of the potatoes get so brown and crisp. YUM!

Garlic potatoes
Mashed potatoes
Sweet potatoes
Fried tomatoes
Asparagus with breadcrumbs
String beans with almonds
A pasta
Garlic bread
couscous
shrimp cocktail
broccoli cold- with lemon juice and garlic
chickpeas-toasted with paprika and a little parm. cheese
Kidney beans- over the rice
Bean salad-mix up whatever you like and then add celery, tomotoes, onions
**Avocado and tomato salad-we have this often- a little olive oil and lemon juice and salt as needed-sometimes we add cucumbers

Couscous is very easy, but I find it messy b/c of the little grains

I think you just boil water and then stir in the couscous - not sure of the ratio

They sell it in containers in the store in I think the pasta aisle. They have regular and flavored. I get the whole wheat.

I've added a little lemon juice, olive oil, peppers, artichoke hearts and tomatoes. Just stir it all together and it is real good. DH loves it.

A lot of times I'll just have steamed veggies as a side. I'll do rice pilaf, risotto or rice savory sometimes. I also have a spinach casserole recipe I looooove (if you want the recipe). Sometimes just for fun I'll make some stovetop stuffing cuz DH loves it. I'll make basked or boiled patatoes too.

I usually do one veggie & one starch:

Veggies:
Steamed/boiled brocolli w/ butter/garlic
peas (Leisure baby peas are our fave)
grilled asparagus (EVOO, garlic S & P)
Spinach w/ oil & garlic
Creamed spinach
Corn
Grilled vidalia onions
zucchini

Starch:
Rice (all different kinds-brown, white, onion fried, flavored rices, etc)
Pasta w/ butter & garlic
Wide Egg Noodles " "
potatoes (boiled, oven roasted, french fried, mashed)
stuffing
mac & cheese

4 cups of water to one cup of cous cous...though if you like it a little less fluffy i'd go with 3 - 3 1/2 cups H2O
