Zucchini ideas?
I have a huge one from my moms garden.. anyone have a great recipe for zucchini bread or something else?

This isnt an exact recipe so I just measure everything to taste
Cut zucchini in half long way and scoop out middle and place in a mixing bowl.
Add any of the following to mixture in bowl chopped mushrooms kidney beans garlic italian seasoning/mrs. dash crushed red pepper ect....
Mix well in bowl and stuff zucchini halves with mixture
Place in baking dish and top with italian bread crumbs and parmesian cheese. I then spray top with I cant believe its not butter spray but you could use regular butter if you like
Bake 350* for about 20 minutes or until zucchini is tender and top is browned.

My family has been making this pie for years! It is a great way to use up all the garden zucchinis and it is very tasty!
Zucchini Pie
1 cup Bisquick 4 eggs, beaten 1/2 cup vegetable oil 1/2 cup grated parmesan cheese 3 cups zucchini, diced 1 small onion, chopped 1/4 teaspoon dried oregano Freshly ground salt and pepper to taste
Preheat oven to 350 degrees.
Mix Bisquick, eggs, oil and cheese in a medium bowl. Add zucchini, onion, oregano, salt and pepper, mixing well. Spray or grease a large pie plate. Add zucchini mixture and spread out evenly. Bake at 350 degrees for 30 to 40 minutes. Let rest for 10 minutes before cutting.

I slice it up and open a can of stewed tomatos. Put it on the stove for half an hour or so (until the zucchini is tender) YUM
