Re: cutting one cake into 3 layers
Put the cake in the freezer (or very cold refrigerator) for a while. When the cake is hard, take it out and slice with even, hard strokes.
I used to work as a baker's assistant at a bakery. 3 layers is kind of tough, for sure.

Is the caked already baked? Can you just split the batter into 3 pans and cook it that way instead? Or use one pan and bake 3??

I would def not do it without a cake leveler==(think thats what it was called) is so easy that way.

I've used dental floss to cut a cake into 2 layers. 3 may be hard though.

I have done it with dental floss also. It works pretty good. The layers come out very even with no crumbs.

I think unwaxed. Wouldn't want little wax pieces on the cake.
