If you love Creamed Spinach.....

Made this last week with roasted chicken and roasted potatoes..GREAT!!!!!

CREAMED SPINACH
3 tbsp. butter
4 tbsp. flour
salt & Pepper
Dash nutmeg
1 1/2 c skim milk
4 oz. cream chese (can use non-fat)

1 tbsp (I omited and used cooking spray)
2 tbsp. onion, minced
2 packages frozen spinach, chopped, thawed and squeeze drained
1/4 c. Parmesan cheese

Melt 3 Tbsp. butter in a small saucepan on Med-Low heat. Stir in flour, salt & pepper, &nutmeg, until creamed together. Stir in milk a little at a time. Increase the heat to Medium. Constantly stir with a whisk until mixture is thick and smooth. Slowly add in cream cheese until mixed thoroughly.
Remove from heat and set aside.

Melt 1 Tbsp. butter in a 2 quart saucepan over Medium heat, add onions and cook until transparent. Add spinach lower the heat and heat through. Stir several times until spinach is almost completely cooked.

When spinach is almost done, add white sauce and Parmesan cheese. Stir well and simmer until completely blended.

Serves 6
