Potato pie

You know.. the mashed potato pie with mozzerella, breadcrumb topping...

Does anyone make this?? I make it often but would like to know how everyone else makes thiers.

Ok this is how I make mine...

Boil peeled potaotes until soft. I use a ricer... I guess you can mash them.. but I have always used a ricer for mine. Pass potaotes through ricer into a bowl. I add chopped parsley, mozzerella, parmesean cheese, a little salt, pepper , beaten egg, roasted garlic. Sometimes a roast a few cloves of garic and smash them then add them. You can use garlic powder as well. Don't use too much garlic / garlic powder... it shouldn't be overpowering. Then I butter a baking dish and use breadcrumbs to coat. ( like you are flouring a cake pan). Thin layer. Then i add potato mixture, sprinkle entire top with a layer of bread crumb and place pats of butter over the top. Let bake about 350 untill bubbling and brown and them let it sit out to cool and set. Probably around 30 min. Sorry I can not give exact measurements but this is one of those recipes where i just know how to make it.. and I eyeball everything. You can also season to taste. My uncle and grandma always make this with proscuitto or salami added in as well. Chat Icon

This is how my mother makes it - sometimes she will use pepperoni aside from the other two meats, depending on what she wants to use . . .
