Tuscan Garlic Chicken
Made this last night and I wanted to share. It was really yummy.
6 boneless chicken breasts 1 1/2 cups flour plus 1 tbsp salt & pepper 1 tsp dried basil 1lb fetticune or curly fettuccine 2 tbsp garlic chopped 1 red pepper sliced into thin strips 1 cup frozen leaf spinach thawed and drained good. 1/2 cup dry white wine 1 cup heavy cream 1 cup parm cheese grated Combine 1 1/2 cup flour, salt & pepper and dried basil in a dish. Season chicken with salt & pepper, dredge in flour, shaking off exess. In a large pan, saute chicken. Then transfer to 350 degree oven to complete cooking. In a medium sauce pan add 2 tbsps olive oil, heat over medium heat. Saute red pepper until soft, then add garlic, saute 1 minute. Then add 1 tbsp flour and cook 1 minute. Add white wine and bring to a boil 2 to 3 minutes. Then add the cream and spinach. Stir in parm cheese. Season with S&P to taste. Add some of sauce to pasta, then plate the pasta, top with a piece of chicken and spoon additional sauce on top.

Olive Garden Recipe? Once a server gave me this recipe - trying to make up for crappy service.
I haven't tried it yet, but it looks good.

I don't know if it is an Olive Garden recipe. I cut it out of the Staten Island Advance's Food Section last year.

Yeah - we got the same recipe at Olive Garden a couple of months ago. I just doublechecked and it is on their menu with the same name.

We made this tonight - it was good. Not as good as Olive Garden makes it, because obviously I'm sitting on my arse while they cook it for me, but it was pretty good.
Plus, we modified it so it was lower fat. We used fat free half and half instead of heavy cream, and we didn't use that much parmesan cheese, we only did a sprinkle at serving.
I'll put it on our 'every once in a while' list.
