We backpacked through Europe: Italy, Germany, Spain, England, Czech Republic, and France. (not in that order) We actually had backpacks. I would advise to get those suitcases that stand upright and roll. If I had it to do over again I would PULL instead of backpack. It just gets heavier and heavier.

I stayed in a few hostels with my cousin when we went to Poland last summer. They were generally better (cleaner, nicer) than I expected, but I had very low expectations in the first place.
I didn't really care for them, and would rather find a cheap hotel next time. I found the hostels too college dorm-y, IMO. I've outgrown hanging out with random people, using common bathrooms/showers, and being kept up at night by loud hallmates.
That said, we had a great experience traveling all over the country. I'd just prefer to stay somewhere else next time I go to Europe.

I backpacked through Europe with 2 friends and we had a great time - but the backpacks did get VERY heavy.
We stayed at pensions and hostels where we could have our own room - we were happy that we did that. I'm not sure I would be happy in the dorm-like rooms
Somethings we did were:
found all our old underwear - I had enough to wash half way through and then throw out after the next wear
always ask the check-in person for inexpensive places to eat - they were a wealth of knowledge
the overnight train is a great "hotel" when traveling to different cities.
If you are using the guide books - "let's go" or frommers - call ahead before you leave for the city to make a reservation. There can be a mad rush of everyone getting off the trains. And NEVER go with the skeevy guys that are offering rooms when you get off the train.

Thanks for all the feedback!
I think I’m stuck with a backpack, some of our time will be spent camping/trekking.
I am definitely looking into private rooms at the hostels, DH & I would prefer to stay together.

I backpacked across Europe with some friends after I graduated from college. It was awesome and I wouldn't trade it for anything, but we were looking to make friends and party, which was the atmosphere we found at most hostels. DH and I are thinking about doing a big backpacking trip in a few years, too. But do your research. Sometimes you can find inexpensive hotel rooms for the same or similar price as a hostel, but have more privacy and a bed to share with your DH.
I loved having a backpack and prefer it to a suitcase for carrying around - just be sure to get a good, comfortable one that isn't too heavy!
