Re: Corn bread stuffing
I have never made this personally but here is a recipe,
INGREDIENTS: 1 (16 ounce) package dry corn bread mix 2 tablespoons butter 1/2 cup chopped celery 1 small onion 2 eggs, beaten 2 cups chicken stock 2 tablespoons dried sage salt and pepper to taste
--------------------------------------------------------------------------------
DIRECTIONS: Prepare the dry corn bread mix according to package directions. Cool and crumble. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish. In a large skillet over medium heat, melt the butter and saute the celery and onion until soft. In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well. Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.

I follow pretty much the same recipe except I use make cornbread using Jiffy mix, let it cool and crumble it.

Re: Corn bread stuffing
I have a recipe by Betty Crocker for:
Bacon-Cornbread Stuffing
Prep Time : 25 Min Yeilds - 8 servings Calories = 190 per serving
4 slices bacon, cut into 1/2 inch peices 1/2 cup chopped green bell pepper 1/2 cup chopped onion 1/2 cup sweetened dried cranberries 2 1/4 cup Water 4 cups seasoned cornbread stuffing crumbs (16 oz bag) 1/2 teaspoon salt 1/4 teaspoon dried marjoram leaves
1. Heat oven to 350 degrees. Spray 8 inch square glass baking dish with cooking spray. In 12 inch nonstick skillet, cook bacon over medium heat for about 6 minutes; until browned, not crisp. Stir in bell pepper and onion. Cook for additional 3-4 minutes or until tender. Stir in cranberries. Add water; heat to boiling. Remove skillet from heat.
2. Stir in stuffing mix, salt and marjoram until well mixed. Spoon into glass baking dish.
3. Cover with foil; bake for ~ 30 minutes or until thoroughly heated. Enjoy!
