Fresh turkey question

I just bought a fresh turkey today but not sure what to do with it. Do I keep it in the fridge until Wedn. when we season it and such or freeze it and then defrost it? The date on the label says good until 11/23. TIA.

I would never leave any uncooked meat unfrozen for a week...... I'd freeze it

I ended up freezing it and plan on taking it out to defrost tomorrow.

isnt that the whole point of getting a fresh turkey is that it has never been in a temperature lower than i think 40 or something like that?
We oick up our frsh turkey wednesday for that reason.

i coudl be totally off here

I pick mine up on Wed as well and brine it overnight.

We bought our Turkey fresh on Saturday. The butcher told us it's not good to freeze it. He said just keep it in the fridge. we do this every year

Actually, I read an article from cooks illustrated that said that it is routine for 'fresh' turkeys to be partially frozen... (just not frozen solid). they're kept at a temp very close to the freezing point, and do get icy inside. (I thought they were kept at 40 degrees too until I read this article) Becuase they're kept so close to the point of freezing, they usually partially freeze, and thaw, and partially re-freeze....

In one of their infamous blind taste testings, the frozen turkeys actually won.... becuase tasters could tell that the 'fresh' turkey was a bit off (the testers attributed that to the repetitive partial freeze/thaw).

their winning turkey in the taste test was a frozen turkey that was kosher, and therefore pre-brined... the salt brine obviously improved the taste of the meat by salting the whole bird a bit....

I love cooks illustrated... from now on, only frozen kosher turkeys for me Chat Icon
