I use about 8 Granny Smith Apples for tartness and about 4-5 (depending on the size) McIntosh Apples for sweetness per pie.

I was just about to post this!! I usually use half granny smith and half whatever looks good, but I wanted to make a more educated guess this year. A website I'm looking at right now says:

"I've made this apple pie with several different types of apples. Jonathon apples make a delightful pie, but so do Delicious or Macintosh apples. Gala, Fuji, and Braeburn apples are OK, but I don't prefer them for a pie. If you'd rather have a tart apple pie, then use Granny Smith apples."

We shall see how it comes out but tonight I did it by thirds... 1/3 granny smith, 1/3 fuji and 1/3 mcintosh. It smells good... Chat Icon

I agree. I add a Granny Smith for depth, but I prefer Golden Delicious. I find I need less "sweetening" when I use Goldens.
