need quick latke help

I am having some friends over at noon.

I made the latke "dough" (is that what you call it?) I have half an hour right now to fry 'em up before I have ot get my daughter from school - so the latkes will be out for 1/2 an hour before my guests come.

What is the best way to reheat them?

OR should I just wait until my guests are here - fry 'em up and serve them fresh? (keeping in mind there will be three 2 year olds around)

I have found that you really can't reheat them, it just may be in your best interest to fry them when your friends are over.

when we have people over for the holiday's I usually make them ahead of time (not too far ahead) and then keep them in a warm oven, they seem to stay crisp.

If they sit too long, they will become like lead bombs in your belly covered in fat. And they wonder why so many Jews have digestive issues. I am not kidding.

Re: need quick latke help

We ate some reheated latkes last night - have to say, not nearly as good as the real thing. We heated them in the microwave.

You know what I'd do - I'd fry them up 5-10 minutes before they arrive and then store them in the toaster oven, oven, or just cover them - that should be just fine.

I don't have experirecne with this, but I just read a recipe for them in a magazine & that's what they suggested, but I'm not sure you want to leave your oven on when you go pick your daughter up.

If you turn your oven on while you cook though, and then turn it off & put them in, it should keep them warm.

Re: need quick latke help

i would fry them up fresh. I hate re-heated latkes..especially if you make them very thin..then they are just thin potato blobs.
