calamari (need tips!)

I want to make calamari for Christmas Eve (it's my DH favorite and I want to tackle making it)

But I have never made it before, can you give me tips!!!

If you are going to fry it, soak it in Buttermilk for a few hours or overnite. It tenderizes it.

YES! That is what inspired me. Paula Deen made it last week and it looked so easy and I thought I could do that!


What about cleaning, preparing? Is it like cooking shrimp?

We make this every year..here's what I do.

We get the calamari from the fish store still in tubes. I clean it our further and then cut into rings.

I prepare the flour with a little salt and pepper and mix it all up. I whisk a couple eggs in a bowl and also get a pot with canola oil going on medium heat.

I first put some calamari in the egg and make sure to soak it. Then transfer to the flour mixture where I make sure to coat the inside and outside of each ring. Then I transfer them to the pot and fry them up. They fry fast so I try to keep a careful eye on them.


My husband helps me...he coats in flour while I fry. I found that coating them all first and then frying didn't come out as I had hoped...almost like the flour changed from sitting in the egg and wasn't as crispy or came off in the oil.

When you say clean out the tubes....do you mean rinse, or is there "Stuff" that needs to be removed?

It really depends on the place you get it but I always check. I rinse them with cold water and as I am doing it (this is before they are cut into rings) I put my fingers all the way in to the end to make sure that it is clean. I have had situations where there was the clear plastic-type thing (for lack of a better description or word) that I had to pull out. As soon as you have your hand in you will feel it (if it's still there)
