New Year... New Recipes

So who's with me? I've been so crazed w/ the holidays and medical stuff, that I feel like all we do is eat out at restaurants or get takeout. My New Year's resolution is to eat healthier and try to cook more.
Anyone have any good recipes they wouldn't mind sharing? I'm a big chicken eater, and like pasta. Not so big on peppers and stuff like that but whatever you're willing to share, I can improvise if needed. Chat Icon

I'm doing the same thing. My plan is to make at least one new thing each week.

This week's recipe was Pumpkin Baked Ziti w/ Carmelized Onions and Sage breadcrumbs. It came out pretty awesome.

I've been trying to cook more at home too...we did sooo much eating out around the holidays....I made a big double batch of sauce last weekend and froze some of it for another time.

between last week and this week we had at home...

-steaks with mashed potatoes and steamed fresh asparagus..(foreman grill for the steaks)

-meatloaf with scalloped potatoes and broccoli

-homemade mac and cheese-with hamsteak and broccoli...

and then we had leftovers one night....

not soo healthy, but still better then easting out....

I have to buy some chicken to marinate...I do that alot, chicken marinated and then grilled (again, the forman grill saves my life most nights)....

here's a quick chicken dinner recipe..

chicken and pinapple teryaki..

1. put chicken in a bowl-poor on some teryaki
2. open can of pineapple-pour out the joice, putting a little into the chicken mixture...then pour some teryaki right in the can with the pineapple...
3. set aside (to marinate) while you make uncle ben's 5 minute rice (brown or white, which ever you like best).
4. grill chicken and pineapple on foreman grill and serve over rice....quick and easy...

tip-I buy the big family packs of skinless boneless chicken breasts when they're on sale at stop and shop, and then I break them up into ziploc bags, one or two breasts in each-some I leave plain, but some I pour in some marinade before I freeze (teryaki, lemon pepper, etc) that way when I take it out to defrost in the morning, it's all set to go when I get home from work....

I'm making this right now:

Balsalmic Chicken

I like to use thin chicken cutlets

I don't really use any measurements when I cook

2 garlic cloves, finely minced or pressed
1/2 pound mushrooms, quartered

About 2 1/2 tablespoons ba lsamic vinegar

1/2 cup or so of chicken broth

fresh ground pepper to taste

Spray skillet with non stick vegetable spray, heat over medium heat. When hot, add chicken and cook until brown, transfer chicken to plate.

Add olive oil to pan, saute garlic and mushrooms (I like to add a chopped shallot as well) briefly, be careful not to burn the garlic. Return the chicken to the pan and add vinegar chicken broth and pepper. Reduce heat, cover and simmer for 15 minutes or until chicken is cooked.

Transfer to serving dish and top chicken with mushrooms and pan sauce.


I'm also making garlic roasted cauliflower as a side dish.
