Easy Recipes

I seriously am the worlds worst cook....but I made a resolution to start cooking. Any easy ideas (and quick---I work full time and have a 7 month old). Or any cookbook suggestions? Thanks!!!

we do a lot of rachael rays' 30 minutes meals... especially the pastas. its just DH and i, so we find we can get two meals out of those ( if you don't mind eating leftovers!)
campbells soup website is also good. they have a bunch of stuff that takes about 5 minutes to put together, but then about 40 minutes to bake... my favorite is a chicken and rice bake ( chicken breast, uncooked rice, cream of chicken soup, and some frozen corn all mixed together and baked for about 45 minutes and at the end you add some shredded cheese... soo good, and only one pot to clean!)
i also use my freezer a lot. when i do have some time, i'll make a baked ziti or some stuffed shells or some chili in the crockpot and freeze them for nights when i don't have time or don't feel like cooking...

The food network website has recipes and is easy to browse. I find their recipes are really well written and clear!

She kind of drives me nuts, but Rachael Ray's recipes are about 30 minutes and pretty easy.

I posted this under the "new year, new recipes" thread, but I'll repost it here:

chicken and pinapple teryaki..

1. put chicken in a bowl-poor on some teryaki
2. open can of pineapple-pour out the joice, putting a little into the chicken mixture...then pour some teryaki right in the can with the pineapple...
3. set aside (to marinate) while you make uncle ben's 5 minute rice (brown or white, which ever you like best).
4. grill chicken and pineapple on foreman grill and serve over rice....quick and easy...


I use my foreman grill all the time....steaks, chicken breasts, grilled veggies-anything like that is really easy wtih the foreman grill....cut things up, marinate them, grill them, and serve with rice or salad....

another super easy recipe is shrimp and pasta...

get a package of shrimp (de-shelled) (frozen are fine, or you can get them from the fish counter, etc.)
in a small pot, or a frying pan with high sides-heat up a little bit of olive oil (just enough to coat the bottom or the pan) or butter-then add some white wine (like maybe 1/2 a glass), and some lemon juice (a squirt or two-or if you have fresh lemons in the house, squeeze half a lemon in....add maybe a teaspoon of minced garlic, and some hot red pepper flakes and then let it all cook off on a medium heat...
-while it cooks, start a pot of water for pasta....by the time your done with that...the sauce should be nice and blended-then add the shrimp in and let them cook, stirring occasionally. The shrimp are done with they turn nice and pink...then you can shut the pot off and cover it.....
-finish making the macaroni, and then pour shrimp over macaroni and serve.

-with this recipe, you can change it around however you like-you can add mushrooms, spinach, broccoli to the shrimp....you can skip the hot red pepper....

Another quick one....

put uncooked shrimp into a bowl and then squirt on some lemon or lime juice, and then a shot or two of tequila...

let it sit while you make some rice (uncle bens, or rice a roni, whatever you want-spanish rice is nice with this)

then throw the shirmp on the foreman grill and let them cook-serve wtih the rice, or scrap the rice and have salad....

If you go on the Kraft foods website, they have tons of recipes. Ive found each one pretty easy to make.

I 2nd this site. you can also sign up for the free recipe magazies. they send them out 4 times a year. I really like some of the recipes from there! and sooooooo easy
