My friend made this soup last week and it was DELICIOUS! I had to have the recipe & I made it over the weekend.
Here's the recipe:

Asian Chicken Soup

4 ounces rice noodles
3 Cans (14 ounces each) Chicken Broth
3 Thin sliced Chicken Cutlets
4 Ounces Shiitake Mushrooms, stems removed and caps thinly sliced
2 stalks of Bok Choy
2 Tablespoons soy sauce
1 tablespoon grated, peeled fresh ginger
3/4 teaspoon salt (I left this out cause of the soy sauce)
1/4 teaspoon Asian sesame oil
2 green onions, trimmed and thinly sliced

Prepare Noodles as label directs; drain
In a 4-quart saucepan heat broth to a boil over high heat.
Add chicken and reduce heat to low. Simmer until chicken is cooked through about 15 minutes. Remove chicken with a slotted spoon and set aside to cool.
Stir in mushrooms, soy sauce, ginger, and salt into broth. Simmer uncovered 10 minutes.
Cut chicken into thin strips. Wash & break apart Bok Choy.
Add chicken, bok choy, sesame oil and green onions to pot.
cook just until bok choy is soft.

serve over rice noodles!
