what can I do with chopped chicken?

I have a pound of chopped chicken, I was going to make a meatloaf but I think I want to do something different...suggestions?

Chicken burgers or chicken chili? Maybe a chicken shepard's pie topped with sweet potatoes instead of white potatoes?

Anything you make with ground beef or turkey can be used with chicken Chat Icon

Asian Chicken Sandwich
6 scallions, thinly sliced (including some of the green)
1 can (8oz) water chestnuts, drained and chopped
½ C sweet-and-sour duck sauce
2 Tbsp olive oil
2 oz shitake mushrooms, cleaned and coarsely chopped
1 clove garlic, minced
1lb ground chicken
2 Tbsp chopped cilantro plus leafy ends of 4 springs
1Tbsp soy sauce
4 sesame seed buns, lightly toasted
Preparation
Mix 2 Tbsp each sliced scallions and chopped chestnuts with the duck sauce in small bowl.
Heat oil in medium-sized nonstick skillet over medium-high heat. Add mushrooms, garlic, and remaining scallion. Stir-fry until mushrooms are tender and scallion are soft, about 304 minutes. Let cool slightly.
Gently combine ground chicken, mushrooms mixture, remaining chestnuts, chopped cilantro and soy sauce in a bowl. Shape into 4 patties about 3/4" thick. Season tops with half the salf and pepper.
Add patties to same skillet, season side down. Sprinkle with remaining salt and pepper and cook over medium heat for 9 minutes. Gently turn patties. Cook 8-9 minutes longer, or until they register 165 degrees on an instant-read thermometer.
Fill each bun with a burger. Top with sauce and cilantro sprig.
Pass any extra sauce.

Fiesta Turkey Sandwiches
1 lb ground turkey
1/3 C shredded mexican-style taco cheese lbend
2 Tbsp minced red pepper
2 Tbsp coarsely grated sweet onion
4 fajita flour tortillas, warmed
2 C shredded iceberg lettuce
½ C prepared guacamole
2 Tbsp sour cream
Preparation
Gently combine ground turkey, cheese blend, red pepper, and onion in a large bowl. Shape into 4 patties about ½" thick. Place on a small cookie sheet lined with plastic wrap. Cover and refrigerate for about 30 minutes to combine flavors.
Heat gas or charcoal grill to medium-hot. Using a long-handled brush, season rack with vegetable oil.
Grill patties, covered, for 4 minutes. Turn and grill 4 minutes longer, or until patties register 165 degrees.
Place a tortilla on a flat surface. Mound ½ C of lettuce on one half of the tortilla. Place a burger on the lettuce and top with 2 Tbsp of guacamole and ½ Tbsp sour cream. Fold the tortilla in half, covering the filling. Repeat to make 4 burgers total and serve.
(To broil: Place patties on a broiler pan and broil 4-5" from the heat for 8 minutes, turning once or until they register 165 degrees.)

Wow you girls are QUICK. I should have mentioned in my OP that we can't have cheese but some of your responses look delicious, thanks!
