I need Easter brunch help

I am having a hard time deciding what to make.
I definitely want to do a french toast casserole and sausage. It's just 4 of us so I don't want to go overboard. What would you make to go with that?

Re: I need Easter brunch help

you need a egg dish in case someone does not like french toast--unless you know they do...
I have great recipes from my business I use...
how about sundried tomato andsausage casserole?
chilled pineapple soup? over the top but good...
or a fruit platter...
lattes, coffee and tea
bagels-cream chesse and butter
bacon,
u can do some of each or all...
mimosas.
bloody marys...(ugh, but..some like them)

let me know if u want any recipes

I'll take an egg casserole recipe. Do you have one that doesn't have much veggies? DH and his brother are not into veggies Chat Icon Chat Icon

Egg Casserole

2 packages crescent rolls
red/green peppers
2 containers of egg beaters
Onion
5 eggs
cheddar cheese

Layer bottom of lasagna pan w/crescent rolls. Make scrambled eggs – do not cook all the way – leave a little moist. Pour on top of crescent rolls. Saute peppers and onions and add to pan. Sprinkle cheddar cheese on top. Bake at 350 for 20 minutes.

Re: I need Easter brunch help

I'd add a platter of scrambled eggs, and fresh fruit.
