Hey Lish! Ry is ADDICTED to avocados!!! We eat them every day almost, lol!
We eat it with grilled chicken, put it in salad, eat it with fish, tacos...
You name it!

I do the same thing...sometimes to make it a cute/easy appetizer I put the combo in a tortilla scoops...big hit with DH & friends.

I will chop up an avocado and chop up a tomato and make a little avocado salad. I add equal parts of avocado and tomato, add some sliced almonds and put a small amount of lemon juice and salt and pepper.
Soooo goood!!!

my newest favorite way is something I tried at Whole Foods this week!
Cut the avocado in half, but don't peel it, becuase u need the skin to be a "shell". scoop out the pit. Fill the part where the pit was with salsa (or pico de gallo works better) sprinkle w/ parmesan cheese. Eat up!

I make chicken tortilla soup and toss in some avocado slices.
And I love them with Chicken Salad Sandwiches!

I love them plain with a little salt.
I also love them with cut up grilled chicken mixed in with tomatos and an italian vinaigrette.

Me too.
I love avocados. I eat them with just about everything. You can cut them up and top them over chicken, steak, fish, anything.
