I LOVE Alton Brown's cookbooks. They're really big on technique and don't have a ton of recipes, though. But they're SO interesting to read! Same for any of the Cook's Illustrated/America's Test Kitchen books.
For lots of good recipes, I like Cooking Light's annual cookbooks (all the recipes from the past year's magazines).

I keep going back to my Nigella Lawson Domestic Goddess cookbook, she has great recipes, and with the metric measurements, they are super easy.
I also like The USA Cookbook by Sheila Lukins (it was a wedding gift from my Moms travel agent, and I still love it) and also The BBQ Bible book type thingy by Steve Raichlin because I love to BBQ.

I'm fairly loyal.... there are 3 books... 2 of super ethnic food (one iranian, one indian), and a book series...
the series I swear by is anything by cook's illustrated / america's test kitchen. if you follow their directions to the letter, it always comes out wonderful
the iranian book is new food for life and the indian book is cuisines of india. Both of these books are meant for people who are already familiar with the cooking techniques of that country... they're not intro's to the cuisine.....

also, www.allrecipes.com I can scale the recipes for 2 people, and most have nutritional information.

I have one of Giada's, forgot the name...great book.
I also love just looking for recipes off Food Network.
For down home cooking, any of Paula Deen's are great, and pretty simple.

I got the Better Homes and Gardens Cookbook "The Bridal Edition" for a shower gift.... I use it on a weekly basis! Besides good, simple recipes, it has good answers to "hosting" type questions. It was a lifesaver for my first Thanksgiving

me too, this is my every day has everything cookbook! My second favorite is my yellow gourmet cookbook - for when I want something a little beyond "everyday"
