Eggplant!
Do you make your eggplant w/ the skin on?
I do not like the skin at all--I always peel my eggplant!!
If you do leave the skin on, is there a reason why?

eggplant gets too mushy in some recipes without the skin.
the skin can make it bitter, so cut the eggplant, salt it a little and let it sit in a strainer for a while....the salt will draw out the water and bitterness from the eggplant.

I usually "stripe" the eggplant and only take off strips of skin all the way around before cooking it.

Before I got married I alway made my eggplant with the skin (held it together better), but DH is allergic to the skin of the eggplant so now I peel it completely
