here's our 'midweek' guac recipe for when we make nachos or burritos for dinner....
mash ripe avocado. add minced onion (roughly 1/2 to 1T per avocado), one minced garlic clove, 1T cilantro, 1t lime, and 1 heaping T sour cream.... salt to taste
you can also add some diced tomato and jalepeno to that...

Okay I take a ripe avacado and chop it up. Then I add about half an onion and one tomato, chopped. Then I add about 2/3 cup of cilantro chopped really good. Then I add Kosher salt (not regular salt, kosher salt is the secret ingrediant) I don't know how much I use, I just add and mix until it tastes good. Same with lime juice. ( I just add the salt and lime juice alternately until I get a good taste. This adds a little zing and it keeps the avacado from browning. I mix it all together.
If you add too much salt, just add more lime to balance it out.
I don't mash the avacado because I like a little chunk to my guac and once you add the lime juice its gets softer and mushier anyway.
I do add chilles sometimes to spice it up.
I have never added sour cream but that sound yummy.. do you mix it in?

3 Haas avocados (peeled, pitted, and mashed) 1 lime, juiced 1/2 cup diced onion 3 tbsp fresh cilantro, chopped 2 roma tomatoes, diced 1 tsp. minced garlic cayenne pepper (to taste) salt (to taste)
To make this REALLY easy... you can just stick each item into a food processor for quick chopping! I usually put the onion and garlic in together, and the cilantro and tomatoes separately.
Otherwise, just mash the avocados in a bowl, and add the rest of the ingredients. mix well, and make sure you stick it in the fridge for at least an hour!
