What to make for Brunch

It's for about 11 people
This is what I have so far:

Fritatta
Toast/waffles
Quiche
Baked French Toast Casserole
Fruit Salad
Pasta salad
Deviled eggs
Coffee Cake
Coffee
OJ

I can't get bagels, cause let's face it, I am not serving NC bagels to NYersChat Icon

I have a 3 month old, so I want fairly simple stuff or stuff I can make ahead of time. PLUS I am cooking dinner for everyone too! Chat Icon

Eggs made to order is very time consuming. How about a Fritatta instead?

When I hosted brunch I made the coffee cake that is posted somewhere on this board. People STILL can't stop talking about this!!! Oh, here it is: http://www.lifamilies.com/chat/topic-117994-1.html It's the one that uses cake mix.

I make this all the time and get RAVE reviews from everyone!

The best part is that you can prep it ALL the night before.

Baked French Toast Casserole w/ Praline Topping

1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Dash salt
Praline Topping, recipe follows
Maple syrup

Slice French bread into 20 slices, 1-inch each. Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
The next day, preheat oven to 350 degrees F.

Spread Praline Topping evenly over the bread right before baking and bake for 45 minutes, until puffed and lightly golden. Serve with maple syrup.


Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
1/2 cup chopped walnuts
1/2 teaspoon ground cinnamon

Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

French toast or waffles?

Maybe a salad - ceasar, mozzerella and tomato?

You seem to have a number of "breakfast" items and not as many "lunch" items.

how many would it feed? I plan to make a quich, eggs to order, fruit salad, and that coffee cake recipe too.
