WW Recipes?
Anyone have any good - TRIED AND TRUE - recipes to share? I mean ones you have made and enjoyed already ... it's so hard to tell if they are going to be good when you see them online or in a book.

Re: WW Recipes?
I got one from LIW awhile ago and still make it. It is really good and easy...
First cut up chicken breast and grill it. Then take bag of frozen veggies and cook them in FF chicken broth. Add cooked chicken to it and serve over brown rice. It is really good.
I am also a turkey burger fan. I make them on the George Forman. I cut up tons of veggies(mushrooms, peppers, onions) add worshershire(you know what I meant )
I top it off with slice of ff cheese and eat it bunless. Then I slice zucchinni into long thin pieces, sprinkle adobe and grill on the George, just a little. They come out so good.

Here are two recipes, that I like to make.
Spinach and Feta Stuffed Chicken Breast
WW POINTS® value | 5 Servings | 4 Preparation Time | 20 min Cooking Time | 10 min Level of Difficulty | Moderate
This Greek-inspired dish is brimming with lots of spinach, onion and feta. Pair it up with steamed rice for a complete meal. Or try it over a bed of mixed greens.
Ingredients 1 Tbsp olive oil, divided 1 small onion(s), chopped 10 oz spinach, fresh 1 tsp lemon zest 1/4 cup feta cheese, crumbled 1 tsp table salt, divided 1/2 tsp black pepper, divided 1 pound Tyson Boneless, Skinless Chicken Breast(s), four 4 oz cutlets
Instructions * In a large nonstick skillet heat 1 teaspoon oil; sauté onion until golden, 5 minutes.
* Wilt spinach (steam spinach or heat damp spinach over medium heat in nonstick pan); stir in zest, feta, 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.
* Divide spinach mixture between cutlets. Roll up and secure with toothpicks. Sprinkle with remaining salt and pepper.
* In same skillet, heat remaining oil over medium-high heat. Cook chicken, turning occasionally, until golden brown and cooked through, about 10 minutes. Remove toothpicks.

Stuffed Shells

When all shells are in dish, spoon remaining tomato sauce over shells. Cover pan and bake for 20 minutes. Yields about 4 shells per serving.

Re: WW Recipes?
I have 2 with ground turkey - one I will have to look up for you when I get home (Turkey chili) but I got this one from my leader at a meeting and make it a lot, so I remember it. I adjusted it somewhat to use the whole pacakge of turkey:
Turkey meatloaf 1 package ground turkey (20 oz) 1 cup salsa 3/4 cup uncooked oatmeal 1 egg white
Put all ingredients in a bowl and mix well. Spray a loaf pan with cooking spray and put meatloaf mix in pan. Bake at 350 for 45-50 minutes. Slice into 8 slices, each slice = 3 points
The salsa adds some veggies and flavoring without having to do any chopping and keeps the meatloaf moist. My DH loves this recipe! And it is a really fast meal to make on weeknights.

Re: WW Recipes?
When I was on WW I posted this on LIW:
This is SO yummy!!!! It is 1 point for a cup. I top it with Cabot 50% light cheddar (2 pts per 1 ounce) and melt it in the microwave and add a little Chalula hot sauce (stop and shop or Waldbaums) or any mexican hot sauce, since I like it spicier. It is an awesome 3 point lunch or main dish for dinner.
1 lb of lean ground beef 1 can Kidney Beans 1 can Pinto Beans 1 can corn 1- 4 ounce can chopped green chilis 1 can fat free refried beans (I prefer Taco Bell brand) 1 15 ounce can chopped (diced) tomatoes 1 16 ounce can (or 2 - 8 ounce cans) of tomato sauce (I prefer delmonte) 1 large onion 1 cup water 1 package taco seasoning (I prefer taco bell brand) 1 package Hidden Valley Ranch DRESSING mix (NOT buttermilk one)
Chop onion and brown ground beef. Add the rest of the ingredients (DO NOT drain anything.) Bring to a boil over medium heat and then simmer for 15 minutes.
1 cup = 1 point

Re: WW Recipes?
So far I have made and loved:
Shrimp and Scallion Skewers with Creamy Grilled Pepper Sauce- 1 point per 2 skewers (6 servings per recipe so the whole recipe is 6 points!)
Ingredients 1 medium sweet red pepper(s), quartered 3 sprays olive oil cooking spray 1 cup parsley, fresh, leaves (loosely-packed) 1/2 cup fat-free mayonnaise 7 medium scallion(s), chop 1 and slice the others into 6 pieces each 2 tsp lemon zest, freshly grated 1 Tbsp fresh lemon juice 1 medium garlic clove(s) 36 large shrimp, fresh, peeled 1/2 tsp table salt 1/2 tsp black pepper, freshly ground
Directions
Preheat grill or grill pan. Coat red pepper with cooking spray. Grill, turning as needed, until lightly charred and tender, about 10 to 15 minutes.
To make sauce, place grilled pepper, parsley, mayonnaise, 1 chopped scallion, lemon zest, lemon juice and garlic in a food processor. Pulse until mixture is blended and ingredients are finely chopped; set aside.
Thread 3 pieces each of shrimp and sliced scallions onto each of 12 metal skewers. (Note: If you’re using wooden skewers, soak them in water for 30 minutes before use to prevent charring.) Lightly coat shrimp and scallions with cooking spray; sprinkle with salt and black pepper.
Grill skewers, turning once, until shrimp are just cooked through, about 2 to 4 minutes. Yields 2 skewers and about 2 tablespoons of sauce per serving.
balsamic chicken with mushrooms - 3 points per serving (4 servings per recipe so 12 points for the recipe)
Ingredients 2 tsp vegetable oil 3 Tbsp balsamic vinegar 2 tsp Dijon mustard 1 large garlic clove(s), crushed 1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces 2 cup mushroom(s), small, halved 1/3 cup canned chicken broth 1/4 tsp dried thyme, crumbled
Directions In a nonstick skillet, heat 1 teaspoon of oil.
In a medium bowl, mix 2 tablespoons of vinegar, the mustard and garlic. Add chicken and turn to coat.
Transfer chicken and marinade to skillet. Sauté chicken until cooked through, about 3 minutes on each side. Transfer chicken to a platter and keep warm.
Heat remaining teaspoon of oil in skillet. Sauté mushrooms for 1 minute. Add broth, thyme and remaining tablespoon of vinegar. Cook, stirring occasionally, until mushrooms are deep brown, about 2 minutes longer.
Serve chicken topped with mushrooms.

Bri- this sounds really good. What is the consistency like? Is it like a chili or a stew, or is it soupier?

Re: WW Recipes?
I think it is pretty chili like IMO. If you find it too watery, you can cut the water to 1/2 cup or maybe eliminate it.

I didn't use ginger or five-spice powder ... but improvised with what I had in the house.
By the way, anyone know what 5-spice powder consists of?

Found this on Google:
Originating in China, this spice mix combines equal parts ground cinnamon, fennel, star anise, cloves, and Szechwan pepper. It is often used in meat marinades and as a spice in barbequing. Mixed with ground salt, it makes a dip for deep-fried Chinese foods.
