Making Banana Bread...
....it's in the oven and smells SO good....I feel like I'm going to want to eat the entire loaf when it comes out!!

I wish I had rotten bananas now.........
I know right? It just kinda worked out...I had 2 which wasn't enough, and DH bought a bunch for his rugby tournament on Saturday (they eat the bananas to stave off cramps...something about the potassium i think) and I thought he ate them all. Last night he was like can I throw these bananas away (the 2 I had) and I told him I wanted to make banana bread but didn't have enough...he pulled 2 more out of his rugby bag! (ok yes gross that he left them in there, BUT at least I had enough!)
Long story. hahaha...ah well.

Trader Joe's actually sells a banana bread mix... 2 eggs, 1/3 cup apple sauce and a bit of water. It's delicious. I substitute apple sauce for the oil and add blueberries.

Oooooooh......verrry good to know. I have been substituting the Oil for Apple Sauce when baking too. I love it! Besides the calories.....it still keeps everything so moist.
I will def. try the mix at T.J.
