I do letters of the week according to theme, so much of what I do is theme related. For just the letter, some things I do are...handwriting center with whitboards, sandboards to practice the letter, make a list of words that start with, make a tactile letter with something that starts with that letter (twizzler nibs for the letter t, etc.). SOmetimes I have them make a collage of pictures from magazines, I have created SmartBoard lessons where they have to sort that sound and "not that sound"///hth
