How about just Sophie as her legal name? It's such a pretty name, and not nearly as popular as Sophia!
I love how Emi and Sophie sound together

Isabelle/Izzy is my pick. In the book Chasing Harry Winston, the sisters were Emmy and Izzy!

Since you asked for a sister to Emily then I answered based on what I think sounds best with Emily and I like Natalie with Emily for when you send cards, etc. But they are all nice names.
