Honey Mustard Chicken

Ingredients
2/3 cup lite honey mustard dressing
1/8 tsp table salt
1/8 tsp black pepper
2 tsp dill, freshly chopped
1 medium scallion(s), finely sliced
1 cup cornflake crumbs
1 pound uncooked boneless, skinless chicken breast, four 4 oz pieces


Instructions

Preheat oven to 425°F.

In a small bowl, combine honey mustard dressing, salt, pepper, dill and scallions; remove 1/3 cup and set aside.

Place corn flake crumbs in a shallow bowl. Dip chicken breasts into dressing mixture, then corn flake crumbs. Place into shallow baking pan coated with cooking spray.

Bake until chicken is golden and no longer pink, about 15 minutes.

Drizzle remaining dressing mixture (the 1/3 cup that was set aside) over chicken breasts and serve.

Dijon Roasted Potatoes

Ingredients
1 sprays cooking spray
1 tsp olive oil
2 Tbsp Dijon mustard
3/4 tsp paprika
1/4 tsp dried thyme
1/2 tsp table salt
1/4 tsp black pepper
1 1/2 pound potato(es), new, quartered
1 Tbsp peppercorn


Instructions
Coat a 9 X 13-inch baking dish with cooking spray.

Preheat oven to 425°F. Whisk together oil, mustard, paprika, thyme, salt and pepper in a large bowl; add potatoes and stir to coat.

Transfer potatoes to baking dish and roast 15 minutes; stir and roast until tender on inside, about 15 minutes more. Yields about 1 1/4 cups per serving.

Broiled Salmon with Herb Mustard Glaze

2 garlic cloves
3/4 teaspoon finely chopped fresh rosemary leaves
3/4 teaspoon finely chopped fresh thyme leaves
1 tablespoon dry white wine
1 tablespoon extra-virgin olive oil
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
Nonstick olive oil cooking spray
6 (6 to 8-ounce) salmon fillets
Salt and freshly ground black pepper
6 lemon wedges

In a mini food processor, combine garlic, rosemary, thyme, wine, oil, Dijon mustard, and 1 tablespoon of whole-grain mustard. Grind the mustard sauce until combined, about 30 seconds. Transfer to a small bowl. Add remaining 1 tablespoon of whole-grain mustard to the sauce and stir to combine. Set aside mustard sauce.
Preheat the broiler. Line a heavy rimmed baking sheet with foil. Spray the foil with nonstick spray. Arrange the salmon fillets on the baking sheet and sprinkle them with salt and pepper. Broil for 2 minutes. Spoon the mustard sauce over the fillets. Continue broiling until the fillets are just cooked through and golden brown, about 5 minutes longer.

Transfer the fillets to plates and serve with lemon wedges.

A twist on above. Get a piece of salmon. Slather it with Grey Poupon and wrap in tin foil. Cook until done. DH loves this

Honey Mustard Pork Chops

Approx. 6 Pork Chops
1/4 cup olive oil
2 Tbsp honey
1 tbsp honey mustard
1tbsp lemon juice
2tbsp Brown Sugar
2 packets of Instant chicken Bullion

Mix ingredients in a ziploc. Marinate pork chops overnight. Broil in oven and constantly baste. Comes out Yummy!

mustard-sesame chicken

Mix half flour and half sesame seeds (you can use all white or half black half white seeds for color)

coat chicken breasts in grey poupon.

cover in flour/sesame seeds

cook in oil as you would normally cook chicken cutlets that are breaded.
