Healthy Eats 5/19
Breakfast: 2hardboiled eggs, strawberries, coffee
Lunch: Tuna w/lettuce on a arnold sandwhich thin, 60cal. yogurt.
Dinner: Left overs! as u know i was looking for a turkey meatball recipe..i am sharing because it was SO easy, quick & REALLY yummy!!
You'll need: s&p to taste - 3 tablespoons olive oil - 1 cup scallions, finely chopped - 8 oz. shiitake mushrooms, sliced - 2 tablespoons all-purpose flour - 2 1/2 cups chicken broth - 1/4 cup fine, dry breadcrumbs - 1/3 cup milk - 1 cup freshly grated Parmesan cheese, divided, plus more for serving - 1 large egg - 1 pound ground turkey - 2 garlic cloves, minced - 3 tablespoons minced fresh flat-leaf parsley - 2/3 cup heavy cream - 1 pound pasta - cooked according to package directions --------------------------------------- Preparation 1. Heat oil in a large skillet or saucepan over medium heat. Add 1/2 cup scallions, s&p, mushrooms; cook, stirring occasionally, 5 minutes. Add flour, and cook, stirring constantly, 2 minutes more. Add broth; cover and simmer 10 minutes.
2. In separate bowl, combine breadcrumbs, milk, 1/2 cup Parmesan, remaining 1/2 cup scallions, egg, s&p, turkey meat, garlic & parsley.. form into 1 1/2-inch meatballs.
3. Add meatballs to sauce; cover and simmer 20 minutes more. Add cream, and return to a simmer. Add remaining 1/2 cup Parmesan, and stir until sauce is slightly thickened.
4. Add drained cooked pasta and sauce to pot, and toss gently to combine. Serve with additional Parmesan.

Breakfast - cup of special k vanilla almond cereal, tea
am snack - 90 cal special k bliss bar
lunch - pb&j, minute maid juice box
pm snack - orange, cucumber slices
dinner - chicken marsala, egg noodles and spinach

Didn't do so great today.
Breakfast: granola bar and green ginger tea
Lunch: Every other Tuesday we get an hour lunch instead of a half hour, I use this as my "treat" day. I got beef and string beans over white rice from Chinese food but I got a "mini" portion LOL
Snacks: 100 calorie cookies
Dinner: turkey cutlets on the BBQ and couscous.
Workout: 30 minutes on the Airwalker.

Breakfast: Instant Blueberry Oatmeal, fresh blueberries and straberries, tea
Lunch: Tuna (made with low fat may) on a whole wheat pita, bag of honeywheat pretzels
Snack: a Yogurt if I feel like later this afternoon
Dinner: Don't know yet
