Tofu recipes....

Any one have any recipes to make with tofu?

I like to get extra firm tofu, drain it and then set it in a bowl cover it with a towl and place weight (I stack plates on top of it) and leave in the fridge overnight. This isn't necesary, but I like the texture better. I then slice and marinade in soy, hoison and chili sauces for a few hours. I bake it at 375 for about 20 min. Then I have it in the fridge for stirfrys or to have by itself with rice or to put in soup.

I'm making Tofu Primavera tonight - I bought extra hard Tofu that's already chopped. Drain the tofu and let it sit in the fridge for a day. Then, in a large saucepan put in some olive oil and saute garlic. Add veggies (I like mushrooms, asparagus, artichokes and tomatoes). Let them cook for a few minutes and then add sauce - you can add your favorite marinara, or, you can add a cup of Feta cheese and let it melt in the saucepan with everything. Squeeze half a lemon of juice. Let it simmer for a few minutes and then take it out and put it over your favorite pasta. It's YUUUUUUUUUUUUMMMMMY!

When do you add the tofu? After all the veggies/sauce/feta is simmered or before?

I was gonna buy this the other nite and then I put it back b/c I thought, how the hell am I gonna make this???

I first saute the garlic for a minute or so and then I add all the veggies, sauce and tofu and let it simmer all together for 5-10 minutes, until the veggies are nice and soft. It's really, really easy. The only time consuming part is chopping the garlic and veggies!

So glad you liked it!! This week I'm going to try this Tofu recipe:

Asian Tofu-Noodle Soup
29 oz vegetable broth
1 cup water
2 Tbsp low-sodium soy sauce
2 tsp minced garlic
1 Tbsp ginger root, freshly grated, divided
3 cup mushroom(s), shiitake, stems removed, caps sliced
4 oz uncooked whole-wheat spaghetti, broken in half
3/4 cup carrot(s), sliced
1 1/4 cup snow peas, fresh, trimmed, cut in half on the diagonal
1 cup canned yellow corn, baby, cut in half
8 oz firm tofu, cut into 1/2-inch chunks
1/2 cup scallion(s), sliced


Instructions
In a large saucepan, bring broth, water, soy sauce, garlic and 2 teaspoons of ginger to a boil over medium-high heat.

Add mushrooms, spaghetti and carrots; boil 5 minutes. Add snow peas and baby corn; boil 2 minutes. Add tofu; boil until vegetables are crisp-tender and spaghetti is al dente, about 2 minutes more.

Remove from heat and stir in scallions and remaining teaspoon of ginger. Yields about 1 3/4 cups per serving.

Here's another one I'm going to try this week - vegetarian tofu burgers:

Ingredients


1/2 pound carrot(s), grated
4 medium scallion(s), minced
2 medium garlic clove(s), minced
7 1/2 oz firm tofu, extra-firm preferred, well-drained and diced
1 cup dried bread crumbs, whole-wheat
1/4 cup teriyaki sauce
2 large egg white(s)
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste
4 medium reduced-calorie hamburger roll(s)


Instructions


Coat a large nonstick skillet with cooking spray. Add carrots, scallions and garlic; sauté until carrots are tender, about 4 minutes. Add tofu and sauté for 1 minute more; transfer mixture to a medium-size bowl.


Stir in bread crumbs, teriyaki sauce, egg whites, salt and pepper. Shape into 4 equal-sized patties, pressing firmly with your hands.


Wipe out sauté pan and coat it with cooking spray again. Fry patties on both sides until crisp and brown, about 3 minutes per side. Serve on rolls.

Asian Sesame Stirfy
Quick Cuisine by Bonnie Stern

Ingredients :
12 oz lowfat extra firm tofu
2 tbl sesame oil
1/4 cup sesame seeds
1 tsp vegetable oil
2 cloves garlic finely chopped
1 tbl fresh ginger root chopped
2 carrots sliced 1/4" thick on the diagonal
2 red bell peppers halved/seeded sliced
1/4 lb snow peas trimmed
1/4 cup teriyaki sauce

Method :
Cut tofu into 1 inch cubes. In medium bowl, gently toss with sesame oil and sesame seeds.

Heat vegetable oil in large nonstick skillet or wok over Medium-High heat.

Add tofu and brown lightly. Remove and reserve.

If there are a lot of sesame seeds in oil, strain and return to skillet.

Add garlic and ginger; cook until fragrant, about 30 seconds to one minute.

Add carrots and peppers; cook 2-3 minutes or until beginning to soften.

Add snow peas and teriyaki sauce.

Bring to a boil.

Place vegetables on serving platter and top with tofu.

Makes 4 servings


NOTES : Serve this with steamed rice or noodles.
