Share your Roast Beef recipe
Do you have a good one?
I want to make this for DH as a go-to dish this week since I take a yoga class now most nights during the "dinner hour".

FelandJon's recipe is my go to now.. in her words:
"I first season the roast with salt, pepper, paprika, oregano, garlic powder and onion powder then: (PRE) Heat oven to 450°F. Place eye of round beef roast in roaster or pan uncovered, after it has come to temp.
Cook in oven for 20 minutes. Turn off heat. Do not open oven door!
Let sit in oven for 20 minutes per pound. Perfect.
It sounds strange but it works perfectly EVERY time!!! Perfect medium rare"
I do it a little differently in that I make a spice rub from Montreal seasoning, fresh garlic, olive oil and a little worcestershire sauce instead of the dry seasonings - but I'm sure the seasonings she puts on are great because the cooking method is PERFECT.

I don't really have a recipe - just put garlic salt on top.
Instead of a metal baking rack I use celery, carrots and sliced/quartered onions as my "rack".

I actually get the "pot roast oven bag" and use the seasoning it comes with and the bag. Comes out perfect everytime!!!!
