I was wondering if anyone knew how you could find out if a house was going up for sale before the info hits online???

For sale by owner. Also, Realtors can have exclusive listings that will not show on MLS. They do this for two reasons. One to give their own agents, from their office, a chance to sell it and the 2nd reason is to go over the listing in print with the Homeowner before it goes public.
Find a Buyers Agent. You will sign a contract with him/her to find you a home. I do it all the time. You also can do it your self. Find the community you want to live in and start door knocking, it works. Found a house last week for one of my buyers. Is it what they want? your guess is as good as mine, but they will see it first.

if someone is currently living there, just knock on the door or even slip a note under the door asking about it and advising that you are interested

if not try asking the neighbors- good luck!
