Look what I just made... :-)
They're called Mexican Wedding Cakes and they're basically butter, powdered sugar, flour, vanilla, and chopped walnuts or pecans baked in little balls and dusted with powdered sugar. They came out great!! I wrapped them up already since they're for tomorrow night but not before removing several to enjoy now... silly preggo has no self control... At least I'm having them with a glass of milk.

I'd never had them before, but my friend is having a mexican themed girls' night tomorrow so I wanted to bring dessert that wasn't flan or fried ice cream, so this is what I came up with!
I made half with chopped walnuts and half with chopped pecans. They came out chewy and delicious and light! I'm definitely putting them in my arsenal for future use! I could even get pink powdered sugar and make them for my baby shower! (I made the girls promise they'd let me cook / bake for it.)
Wish you were all closer so I could share!!!

this was one of my grandma's favorite cookies to make during christmas time! sooo good :). we should start a baking recipe page for the PGs . It could be dangerous though!

Those look great!
We make those every year at Christmas too but call them Butterballs. . I like the Mexican wedding cake name better . it's one thing to KNOW there's a lot of butter in cookies but to flat out name them that is no good for anyone!

Sure!
I had read that some people like them with walnuts and others with pecans so I split the recipe down the middle and made exactly half and half (which also made it easy to make in the small ceramic bowls I have). But here is the full recipe (makes about 2 dozen):
Mexican Wedding Cakes
1 c. butter, softened 8 T confectioner's sugar (plus extra to powder them at the end) 2 c. all-purpose flour 2 c. chopped walnuts or pecans 1 t. vanilla extract (1/2 t. salt if you use unsalted butter)
Directions: 1. Preheat oven to 350 degrees F 2. Mix all ingredients together with a mixer until well-blended. 3. Roll dough into round balls and place on baking sheet lined with parchment paper. 4. Bake 10-12 minutes. 5. Cool completely, then roll in additional confectioner's sugar to powder. (Must be completely cooled or sugar will melt.)

I'm so glad I'm feeling better again... I couldn't cook for a while because of the m/s and then we moved, but I'm LOVING our new kitchen!!!
