I just made...
...apple pockets!
I'd never made them before but I've been dying to. I used to work right by Brooklyn Borough Hall and at the green market one of the stands sold these DELICIOUS apple pockets I used to eat way too many of... I made this so easily, too! Just used a pre-made pie crust, cut it in quarters, and I put some caramelized apples inside (apples, peeled, with brown sugar, and some pumpkin pie spice and a few drops of vanilla extract), then eggwashed them and sprinkled with crystalized sugar. 20 min in the oven... and voila!
SOOOO good! They're like mini apple pies!
I'm considering making them again for my shower in a few weeks.  One of them is all smushed so I ate that one first... it was still very warm and sooooo good.
I've gotta clean up since I'm making chicken fingers for dinner tonight, which is kinda labor intensive. I'm glad I feel well enough to cook & bake again! Just wanted to share!

These are super simple to make if you go apple picking and have extras around!!
The stuffing itself is just delicious caramelized apples. You could also just caramelize apples and put a very simple crumble on them to make an apple crisp.
I love this time of year!!
